Weenee's Palm oil Noodles stir fry




Ingredients

2 servings
  1. 140 g noodles (2 small packs)
  2. 2 tablespoons palm oil
  3. 1 Boiled egg
  4. 1 medium sized onion
  5. 2-3 medium-sized peppers (scotch bonnet)
  6. 1 medium sized carrot
  7. 1/4 tsp ginger and garlic powder
  8. 2 teaspoons Noodle seasoning(or to taste)
  9. 2 medium sized firmly ripe plantain
  10. 1 cup vegetable oil (for frying the plantain)
  11. Salt (to taste)

Steps

  1. Steam noodles in a cup of boiling water for 2minutes, strain, and set aside
  2. Chop up the onion, Pepper and carrots and also chop up the boiled egg
  3. Peel and slice your plantain thinly in long strips, add a pinch of salt and fry, then remove from the oil when done and set aside
  4. Place your saucepan over medium heat, add in the palm oil to heat up (don't bleach)
  5. Add in the chopped onion and stir fry, then add in the remaining chopped ingredients. Stir fry for about 30 seconds
  6. Add in the noodles then the ginger/garlic powder and the noodles seasoning. Top up with 2 tablespoons of warm water and stir thoroughly to evenly mix(be careful not to mash it)
  7. Allow simmer for another 30secs and remove from cooking heat.
  8. Fold the fried plantain into 2 & string onto a kebab stick for serving
  9. Serve noodles warm with the plantain kebab (recipe takes approximately 10minutes to prepare)
