Ingredients

250 g egg noodles

2 fingers chicken sausage (julienned)

1 medium green bell pepper (julienned)

1 medium red bell pepper (julienned)

1 medium onion (3/4 sliced 1/4 chopped)

2 tablespoons canola oil

200 boneless chicken breast (cubed)

1 large bullion cube
-
1 teaspoon salt
-
1 teaspoon sesame seeds
-
1/8 teaspoon sesame oil
-
1 tablespoon dark soy sauce
-
200 g spinach (washed and chopped)

4 cups water
Steps

Boil water, add salt and bring to a simmer then cook noodles for 4 minutes, strain and set aside

In a dry skillet or frying pan, heat canola oil and add the chicken cubes, season with half the bullion cube and sesame oil, toss for two munites and remove from pan and set aside

In the same pan, add onions, sausage, green and red bell peppers and sauté for 2 minutes
-
Return the chicken, and noodles and toss for 2 minutes.

For the spinach sauce: sauté onions for 1 minute, add blanched spinach and toss for 1 minute more
-
Plate the noodles and spinach sauce and sprinkle sesame seeds and soy sauce.
